Ingredients
2 large eggs beaten
1 cup italian -style bread crumbs
3/4 cups freshly grated parmesan
4 (1/2 to 3/4 inch thick) center cut pork loin
salt and pepper to taste
6 tbsp olive oil
DIRECTIONS
1. Whisk the egg in a pie plate to blend. Place the bread crumbs in another pie plate.
2. Place the cheese in a third pie plate.
3. Sprinkle the pork chops with salt & pepper.
4. Coat the pork chops with cheese.
5. Dip the pork chops into the eggs.
6. Then coat completely with bread crumbs, patting to adhere.
7. Heat 3 tbsp oil in a large skillet over medium heat.
8. Put the pork chops in batches if necessary and cook until brown and reaches 150 degree about 6 minutes per side.
